HOME COOKING – Waterzooi

IF you were to dig beneath the stereotypical depictions of Flemish food in search of traditional home cooking, it wouldn’t be too long before you discovered Waterzooi, a hearty fare that’s long established with the Flanders region of Belgium. Translated as ‘zooien’  in Dutch (meaning ‘to boil’), Waterzooi traditionally consists of either fresh or sea water fish, although in recent times with the lack of fish in the rivers of Ghent, chicken Waterzooi (known as ‘Kippenwaterzooi) has become more common. The rest of the Waterzooi broth is usually made up of potatoes, herbs, eggs, leeks, carrots, cream and butter, guaranteeing a warm winter treat for all.
